Pear Wine March 2018

to keep you informed about our latest releases.  And if we don't talk about our wines, why should you?  I have to because I still get excited when it comes time to finally bottle and distribute another batch of our wines.  Same flavor, sure.  But it is slightly different.  We hit all our targets for alcohol content, residual sugar, acidity, etc., that's all great.  What's exciting is discovering what is different.  What it comes down to is this: How is this crop of Pears, in this instance, different from the last?  More or less sunshine, average temperature differences, rain, or the timing of the frost?  What was the soil type?  And more.  Fascinating.  Time to find the corkscrew and enjoy some wine.

This March 2018 batch of Pear Wine has deeper flavor and color.  It is still our sweetest wine, but it is pleasantly bright, crisp and quite delightful.  The slight, green hue indicates the majority of the skin colors were more on the green side, rather than yellow.  This may tip you off that your about to experience a more crisp pear flavor.  We keep the alcohol content a little lower in the Pear wine because if it's higher, it will simply diminish the fresh flavors and become bitter.  It has always been a favorite of ours and this batch has got us excited for it again. 

I can imagine having this wine with some fresh trout, foil-wrapped with butter, lemon, basil and a little garlic.  Then cooked to perfection over an open campfire.
